Cindy's Scones

My friend from England gave me this recipe which she brought to America when she came here 40 years ago with her husband after the war. I add just about any dried fruit such as raisins, Vince's favorite is cranberries. Plain with cinnamon on top is good too. My favorite is to add about a tablespoon of orange peal, finely grated, with the cranberries.

2 1/2 cups Flour
1 TBS. baking powder
1/2 tsp. salt
1 stick of butter
1/3 cup sugar
2/3 cup milk

Cut the butter into the flour,  salt and baking powder until it is like course crumbs. Stir in the sugar and fruit if used. Stir in the milk just until moistened. Then quickly kneed about 10 times on a floured board just until it is nicely shaped. Do not over work or they will not be light. Pat out lightly until it is about 1/2 inch think and cut with a flowered cutter or roll out into a 1 inch think circle and cut like a pie into 6 or 8 pieces. Separating a bit on a spray oiled cookie sheet, add a sprinkle of sugar or cinnamon and sugar mix before baking in a  375 degree oven for 12 to 15 minutes. Serve warm.
