Vince's Sweet Corn Muffins

Makes 12 muffins

1 cup Corn meal
1 cup Flour
1/2 tsp Salt
2 tsp Baking powder
1 cup Sugar
2 ea Eggs
3/4 cup Milk
1 stick butter(1/4cup)
1/2 tsp Maple Flavoring

In a mixer bowl cream together sugar and butter till well combined.
Add eggs and maple flavoring beat at medium speed till mixture is light and fluffy
Stir together the flour, baking powder, and salt.
Add to creamed mixture alternately with the milk, mixing after each addition.
Divide into greased muffin tin, makes 12.
Convection bake at 350 for 15 to 17 minutes.
Remove from pans and cool thoroughly on wire rack
